Tomato pasta dishes
A red sauce can lead in very different directions. Start with basil-led pomodoro, add the cured-pork richness of amatriciana, or make the sauce carry a meat ragù in bolognese. These dishes are grouped by the ingredient you want the tomato to meet.
Choose the direction of the sauce
- Brighter
- For a sauce led by tomato and aromatics, begin with pomodoro or the chilli-forward arrabbiata.
- More savoury or hot
- Puttanesca layers anchovy and capers; arrabbiata puts chilli more clearly in the foreground.
- Built around the main ingredient
- Choose amatriciana for guanciale, Norma for aubergine, or bolognese when you want a meat ragù at the centre.
